French Onion Steak Sauce

Ingredients

2 Large        White Onions, 1cm slices
2                   Shallots, 1cm slices
2 Large        Red Onion, 1cm slices
2                   Garlic Cloves, minced
0.5 tsp         Dried Thyme
2 tbsp          Brown Sauce
1 tsp             Worschteshire Sauce
200ml         Beef Stock, low or no sodium content
2 tsp            Salt
0.5 tsp         Brown Sugar
150ml           Ground Black Pepper
2 tbsp          Olive Oil / Butter

Directions

1.   Organise all ingredients.
2.  Set a large frying pan over medium-low heat. 
3.  Add butter / olive oil.
4.  Add all sliced onion and shallot.
5.  Season with sugar, dry thyme and half of the salt.
6.  Sautee, stirring occassionally over medium-low heat for 20 to 30 mins.
7.  When onions are a caramel brown colour, add in garlic and black pepper, then sautee for 2-3 mins. 
8.  Stir in brown sauce and Worschteshire Sauce.
9.  Stir in beef stock.
10. Increase to medium heat.
11.  Simmer and stir reducing by 25%.
12. Serve with steaks or refrigerate and keep for up to 1 week.

Chef's Tip

1.  Salt and pepper your steaks and leave uncovered in the refrigerator overnight.
2.  Remove from refrigerator and leave at room temperature for 1 hour before cooking to "temper" the meat.
3.  This will ensure a nice crust, seasoning all the way through the meat and an even cooking temperature.
